Low Calorie Black Bean Burrito Recipe

Quick, easy, inexpensive low calorie diet recipe

Is your pocketbook getting thinner and thinner these days? If so - and particularly if you're trying to drop those pesky pounds, you'll love our cheap-o, delicious, low calorie bean burrito recipe!

Recipe for Low Calorie, Economical Black Bean Burritos  - start to finish, takes less than ten minutes to prepare and will feed a family of 4 generously with a side of rice or Spanish rice. This low calorie burrito recipe makes 8 burritos and contains about 135 calories each.

How to Prepare our Low Calorie Black Bean Burritos

Start with one small can (15 oz or so) of black beans - or feel free to use your favorite beans. Pour the beans into a strainer and rinse them with cold water.

Next, simply transfer beans to a non-stick pan, adding about 1/4 cup of water. When beans are hot, add 1/2 cup of Queso which can be found in the chip 'n dip section at your local market. Most brands typically contain 40 calories per 1/4 cup - and Queso is so cheesy good that a little goes a long way.

The following ingredients are totally optional, but we like to add a Tablespoon of chili powder and a heaping teaspoon of ground cumin and about 1/4 cup of our favorite picante sauce to the beans before we add the Queso. Again - this is totally optional.

We prepare our flour shells by cooking them on the stove top using butter flavored cooking spray, but you can heat them in the microwave between two moist paper towels should you prefer.

Rather than rolling the burritos, Tom and I have a practice of keeping foods deconstructed - so that each of us can personalize our foods. Tom likes more filling than I do, and I enjoy the flour shell more. So he might have one giant burrito with a lot of filling while I'll have two with a tiny bit of filling. Nonetheless, you can fill and roll the burritos before they meet the table if you wish. The deconstructed method also allows us a bit more time together at the table - and makes meal time more fun, more entertaining, more magical!

Ingredient List for Low Calorie Black Bean Burritos

1 can of black beans, drained - or use your favorite beans

1/2 cup of jarred Queso

8 flour tortillas (ours contained 85 calories each)

Serving Tips:

Serve these low calorie babies with sour cream if desired for a few extra calories. Full blown sour cream contains a skinny 60 calories per 2 Tablespoons (1/4 cup) and we recommend regular over low fat as the taste difference just isn't worth saving those 20 little calories.
