The Recipe Ingredients

1 Medium-Size Container of Reduced Fat Whipped Topping
1 Quart of Strawberries, Fresh & Sweet
1 Prepared Pie Crust, Cooled*
Optional: 2 Cups of Activia Vanilla Yogurt OR Prepared Instant Vanilla Pudding**

How to Prepare Our Strawberry Pie Recipe

*You can use a graham cracker crust OR a regular pie crust for this recipe.

Be certain that the shell is completely cooled before adding the strawberries and topping mixture.

OR you can even prepare a meringue crust using egg whites, cream of tartar and a bit of sugar.

You can even skip the pie crust and use a solid sponge-cake base that has been trimmed to about 2 inches in height.

To prepare this recipe, slice the strawberries so that they'll be easy to eat. Carefully fold them into the whipped topping. Transfer to the pie crust or base of your choice. Allow the pie to rest in the refrigerator for at least two hours before serving.

To prepare the version using the pudding, simply prepare the pudding as directed on the box. We suggest you use reduced fat milk to cut calories and fat grams. Add the berries, carefully fold in the whipped topping and transfer to the pie shell. This will make two pies.

If you use the yogurt, add the strawberries and fold in the whipped topping before transferring to the crust. This recipe also makes two pies.

Golden Glazed Strawberry Chicken Recipe

The Recipe Ingredients

4-5 Chicken Tenders
Olive Oil, Salt, Pepper
1 Cup of Fresh Strawberries + 1 Tablespoon of Jam + 1/2 Cup of Orange Juice

How to Prepare This Recipe

Pan roast about 4-5 chicken tenders in a non stick pan. Add a little extra virgin olive oil if sticking becomes an issue. Salt and pepper the chicken to suit personal taste.

When the chicken turns a golden brown and is thoroughly cooked, remove and place on a heated plate.

Cooking Tip: At our humble cottage, I like to heat our plates in the microwave so that our food stays warmer for longer.

While the chicken tenders are cooking, pulverize or fork-mash one cup of fresh strawberries. Add 1 Tablespoon of strawberry jam, preserves or jelly to the berries and incorporate well. Add 1/4 cup of sweet orange juice. You can also use the fresh juice of an orange. If you haven't tried the reduced sugar orange juice at the store which is 'sugar substitute free' you may just fall in love all over again. The Tropicana is absolutely delicious and contains a skinny 50 calories per cup (8 ounces).

Heat the strawberry glaze in the microwave or on the stove top. After transferring the golden chicken to the heated plate or platter, pour the glaze on top.
