Our Divine Low Calorie Stuffed Bell Pepper & Meatloaf Recipes for Dieters

Stuff colorful bell peppers with a mix of extra-lean ground beef mixed with crushed saltines, 1 egg, chopped onion, salt and pepper. Spread catsup on top and sliced onion (raw) and bake in oven at 400° until done. For a traditional, old-world stuffed pepper rice can be added to the meat mixture. I would recommended cooking the rice at least half way to avoid crunchy rice.

This recipe can also be used to make a tasty meatloaf. Simply place the meat mixture into a meatloaf pan and top with the catsup, raw onion rings and raw bell pepper rings.

- Make delicious fajitas. Stuff flour tortillas with a mix of seasoned shredded chicken, sliced bell peppers and onions using cooking spray while preparing to cut calories.

You will need the following ingredients to prepare our Pepper Soup Recipe:

One pound of extra lean ground beef (be sure it's extra lean as regular contains about two times the calories)
4 bell peppers: orange, green, red and yellow. Cut, core, remove seeds and cut into bite-sized pieces.
One onion, chopped - any variety (yellow, red, purple or white)
One fourth cup of chopped cilantro or you can opt to use dried (optional).
One chopped jalapeno pepper (also optional).
One 64 ounce container of V8 Vegetable Juice
1 Tablespoon of Extra Virgin Olive Oil
Salt & cracked pepper to suit personal taste.

How to Prepare Our Pepper Soup Recipe

Cook the onions and the pepper in the olive oil using a deep pot on medium heat. One the onions look clear add the ground beef and cook until done. Add the remaining ingredients; continue to cook on medium heat for about twenty minutes.

The extra ground beef contains about 116 calories per three ounces. The V8 contains about 400 calories total. The olive oil contains 120 calories. The remaining ingredients are ultra low in calories and are often considered as 'free foods'.

This recipe makes a generous eight servings at less than 100 calories per serving. Enjoy with crusty hot bread.
