Free Diet Menu - Rajun Cajun On the Loose

The Rajun Cajun is on the loose, doing a Diet Ditty in da City cuz he jus went light weight!  Here's the Rajun Cajun's favorite diet chicken recipe with a sauce that will have you clicking your heels even when you aren't in Oz.

Cajun on the Loose Chicken

Make chicken sassy by brushing with the following paste:

1 teaspoon of peanut oil
1 onion chopped up fine - very fine
1 teaspoon of finely chopped garlic
1/4 cup of chopped parsley
Louisiana hot sauce - add as much or as little as you like!
1/2 cup of red wine vinegar
1 Tablespoon of brown sugar (light or dark)
1 teaspoon of yellow mustard

Place peanut oil in warm pan.  Add onion, garlic and parsley and cook until translucent (a fancy word that just means 'diaphanous') ('until you can see through it').

Next, add red wine vinegar, Louisiana hot sauce, brown sugar and the mustard.  Cook until sauce is thick then brush on chicken. Grill or roast until the chicken glaze reaches a candied stage.

Quick Confetti Couscous

Prepare 1 box of couscous according to package directions.  Add 1 teaspoon of olive oil to a non stick pan and saute 1/2 cup of sliced mushrooms, fresh chopped parsley, and 1/2 cup of RED bell pepper.  The bright red pepper will add a fun color to the dish.

Take Quick Confetti Couscous to a higher stage by adding red, yellow and green sauteed bell peppers.


Carrot & Raisin in the Sun Salad

Ingredients for this low calorie, low fat recipe are:

2 carrots - grated
1 Tablespoon of dark or golden raisins
1 Tablespoon of Light Mayo
1 teaspoon of Splenda

Mix together and chill thoroughly.

Calories: Serves 2 for about 50 calories each
