We've kept the butter - but we've reigned in the amount so there is just enough to produce this delicious meal fit for any proud or sorry Southerner.
Salt and pepper chicken then roast in oven until done OR toss on the grill. Top with a bit of this sassy glaze:
In a non-stick pan, sautéed the following using cooking spray:
1 cup of sliced button mushrooms
1 small diced white onion
Reduce heat and remove the mixture from the pan, then add 1 Tablespoon of butter (or margarine) to the pan. Be sure that pan isn't too hot or butter will burn.

Next, add a couple Tablespoons of white flour to the melted butter to form a thick buttery paste. Next, add about 2 cups of warm skim milk.
Stir until thick. Add salt and pepper.
If sauce is too thick, add more milk. If sauce is too thin, add a bit of cornstarch mixed with a bit of water when tends to blend better with hot mixtures than flour.
Add mushroom and onion mixture to the sauce and pour over roasted chicken.
