Take 1 small package of chicken tenders and boil in water until tender. Remove chicken and allow to cool completely.
Using your fingers, crumble chicken until it reaches your desired texture. Some people like their chicken very fine, others like it chunky.
Next, add 2 Tablespoons of LIGHT Mayo or Miracle Whip (it's so tangy-good!), salt and pepper. Stir. At this stage, the chicken salad will keep for about two days in a sealed container if you desire to enjoy it at a later date.
To finish up your Nantucket Chicken Salad, add 1 cored, chopped apple that has been misted with either lime or lemon juice, 1 Tablespoon of golden/brown raisins and 1 Tablespoon of chopped walnuts. Mix and enjoy.
