Chicken Cacciatore Recipe

Still Naughty But Healthier Recipes - A reduced calorie, reduced fat recipe.

Brown chicken pieces in oil and remove. Place on paper towel to absorb excess fat. Drain excess fat from pan, then return chicken to pan.

Add remaining ingredients and cook until chicken is tender - about 45 minutes. Serve over spaghetti or noodles.

The Recipe Ingredients
Chicken pieces - washed with skin removed
1/4 cup of olive oil
1 sliced onion
2 1/2 cups of diced tomatoes
1/2 teaspoon of salt
1/8 teaspoon of cracked pepper

Nantucket Chicken Salad, a Chicken Salad Recipe for Dieters

A Medieval Recipe by Diet Bites

Take 1 small package of chicken tenders and boil in water until tender. Remove chicken and allow to cool completely. 

Using your fingers, crumble chicken until it reaches your desired texture. Some people like their chicken very fine, others like it chunky.

Next, add 2 Tablespoons of LIGHT Mayo or Miracle Whip (it's so tangy-good!), salt and pepper. Stir. At this stage, the chicken salad will keep for about two days in a sealed container if you desire to enjoy it at a later date.

To finish up your Nantucket Chicken Salad, add 1 cored, chopped apple that has been misted with either lime or lemon juice, 1 Tablespoon of golden/brown raisins and 1 Tablespoon of chopped walnuts.  Mix and enjoy.  

Rob Roy’s Lemon Peppered Chicken

Serves 4 generously for about 150 calories each

Low Fat Recipe Ingredients for Low Fat, Low Calorie Recipe

4 Chicken Fillets OR Breasts

Lemon Pepper

Juice of 2 Lemons

Non-Stick Cooking Spray 

Wash chicken & pour lemon juice on.   Sprinkle heavily with lemon pepper.   Place on a pan sprayed with non-stick cooking spray.   Bake in preheated oven on 375 degrees for about 45 minutes, or until completely done.


Peppy's Spicy Chicken, a Diet Recipe

Brush grilled or roasted chicken with your favorite picante sauce, hot sauce, or salsa then continue to cook until sauce turns into a perfect glossy glaze.  

Mamasita's Diet Mexican Rice Recipe

Sautéed the following in a non stick pan sprayed with butter flavored cooking spray OR use 1 Tablespoon of olive oil:

1/2 diced bell pepper - any color

1 small diced onion

Add 2 cups of instant rice and stir until coated with pan ingredients.  QUICKLY add 1 cup of warm water.  Stir. Add 1 can of diced tomatoes.

Turn off heat and cap pan with a lid.  In about five minutes, Mamasita's gonna be delighted!

Mexican style diced tomatoes will add a kick and fire up the flames in this tasty dish.

Easy Jicama Jose, a Diet Recipe

Stir-fried thinly sliced jimaca until golden brown in a non-stick pan sprayed with butter flavored cooking spray.

Jumpin' Chili Beans Recipe

Thinly cube two strips of lean bacon and cook until golden brown. Add 1/4 cup of diced onion.

Drain one can of pinto beans then rinse thoroughly.  Add to bacon and sauteed onion then:

Add 1 Tablespoon of chili powder

Add 1 teaspoon of cumin

Add salt & pepper to suit personal taste
