Diet Recipe for Bubble and Squeak: Dice 1 small white onion and 'fry' in a non-stick skillet using no calorie, non-stick cooking spray (butter flavor works best) plus 2 Tablespoons of butter (yes, butter). Next, add 3 cups of prepared mashed potatoes and about 1 cup of cooked, chopped cabbage - drained fully. Cook until golden brown. Diet Recipe for Bread and Buttered Pudding: Spray 8 slices of low calorie bread (60 calories or less per slice) with no-calorie buttery cooking spray OR no calorie refrigerated butter spray. Arrange half the bread slices in a baking dish. Sprinkle with 2 Tablespoons of raisins (using both dark and golden raisins delivers a nice appeal). Cover with remaining bread slices. Mix together 1 and 1/2 cups of skimmed milk, 1/2 cup of Splenda, and the zest of one small lemon. In a separate bowl, whisk 2 egg yolks and three egg whites together, then add to the mild mixture. Pour the mixture over the bread. Dust with ground nutmeg, if desired. Bake in oven a preheated 350-degree oven for about half and hour.
