Diet Recipe for Bell Pepper Rings, Asian Style

Ingredient List for this Low Calorie Recipe

1 large green bell pepper or two small (use any color on hand if you wish)
1 small white sweet onion, peeled, washed and sliced
1/3 package of Uncle Ben's 90 Minute Teriyaki Rice
1/2 pound of extra lean ground beef
1 raw egg of any size
1 teaspoon of soy sauce (optional)
1/4 cup of black canned beans, thoroughly rinsed and dried on a paper towel
extra virgin olive oil, catsup, sea salt and cracked pepper

How to Prepare Diet Bell Pepper Rings

Begin this recipe by removing the stem and seeds of the bell pepper, then rinsing well. Turn the cored pepper upside-down so that it thoroughly drains on a clean kitchen towel or paper towel.

Use either a mixing bowl or a zipper bag to combine the filling. The bag will make the task easier with less clean-up and you'll save water in the process by not having to wash the dirty dish.

Place the following ingredients into the plastic bag or mixing bowl: extra lean ground beef, the cracked raw egg (of course, don't add the egg shell unless you want that extra crunch!), the rice, the soy sauce - which is optional, along with the salt and pepper. Base the amount of salt and pepper that you use on your personal taste accounting for the fact that there is sodium in the rice.

Next, add the bean and carefully incorporate into the meat mixture so that you don't crush or mash them amid the process.Image for Article: Weight Loss, Diet Bean Been Good

Set the bag aside. Cut the green bell pepper into 1/2 inch slices or there-about's. Place the rings onto a sheet of foil that has been rubbed with just a bit of the extra virgin olive oil.

You only need a thin coat to prevent sticking, and the oil works eons better than cooking spray in the oven - which is where these babies are headed after they are assembled. On that note, turn on your oven or your toaster oven to 350 degrees so that it can preheat while we're finishing our assembly of the pepper rings.

Fill the pepper rings with the meat mixture, pressing it gently into the rings. You want a firmly filled ring - not loose. Rub catsup on the top of each ring. We like a lot on our Bell Pepper Rings because it turns into a sweet, candy-like texture as it cooks in the oven. Finally, add a slice of onion to the top. Coat with a bit more catsup if you like.

Place into the preheated oven and bake for about 1/2 an hour - or until they are thoroughly done. Remove and serve with the remainder of the Uncle Ben's rice, green beans and whole grain bread. Opt for fat reduced margarine over full-blown, and enjoy a glass of unsweetened tea with your meal.

Because we used extra lean ground beef and other natural foods, the rings are very minimal in caloric and fat content.

Diet Recipe for Chili Beans & Rice

This is such an easy meal to put together because the recipe makes wise use of prepared products at the market. Again, we'll be using Uncle Ben's rice - this time, the Spanish recipe.

Simply combine one package of the Spanish Rice with one medium can of any of the following varieties of beans: black, red or pinto. Heat thoroughly on the stove top and remove.

For a few more calories you can add corn chips and shredded skim-based cheese to the beans and rice. Serve with flour or corn tortillas, jalapeno peppers, chopped tomato, chopped cilantro, salsa and Pico de Gallo if desired.
