& a Delicious Bell Pepper Recipe

Here is one of Diet Bites favorite low calorie recipes using the impressive bean as the star of the dish. As with all of our recipes, this one is also very easy to prepare and uses minimal ingredients.

Red Bell Pepper Rings, a Diet Bites Original Recipe

Recipe Ingredients: 1 large red bell pepper (or you can use any color of bell pepper that you have on hand), 1/4 pound of extra lean ground beef, 1 egg, 1/3 cup of drained black beans and 1 package of Uncle Ben's Spanish Rice - the variety that is sold in the microwaveable packets which require only 90 seconds to prepare. You will also need your favorite catsup.

Start this recipe by removing the stem and the seeds. Wash the cavity of the bell pepper to ensure all the seeds have escaped amid cleaning. Next, slice into rings. You can slice them any size that you wish; but you will need to make sure that they are all about the same height so that they cook evenly.

In a large storage bag that has a zipper, mix the hamburger meat, the egg and 1/3 of the Spanish Rice. Because the recipe is going to be baked in the oven there is no need to cook the rice in the microwave beforehand.

In addition, the plastic bag makes mixing the ground beef filling so easy - nothing to wash; just toss the used bag into the trash. Also add the beans but carefully incorporate them as they smash easily.

After the meat mixture is fully incorporated, transfer to the bell pepper rings which have been positioned on a flat pizza pan which has been covered with foil and smeared with a bit of extra virgin olive oil.

Press the meat into the rings. Top generously with the catsup and use the back of a spoon to evenly apply on the meat mixture. Be sure to seal the edges of the ring with the catsup.

Bake in a preheated oven for about 30 to 40 minutes at 400 degrees. Oven cooking times will vary.

The juices will run clear and the tops of the rings will appear very red and beautiful as the catsup glistens.
