What is That White Filling in Donuts?

The common ingredients that puts the fluff in donuts.

So creamy, so yeasty, so fluffy good - just what is that white stuff in the middle of that delectable donut? The following are the common ingredients that require about 10 minutes of whipping with an electric mixer - or until creamy before insertion into the donut:

Ingredients for White Filling in Donuts
1 cup of shortening
1 cup of confectioners sugar (powdered sugar)
1 cup of white sugar

The total calories for the tasty white fluff amount to about 3,072 and this unhealthy recipe generally fills a baker's dozen donuts. Keep in mind that these calories are for the filling alone. Wrapping a yeasty donut dough around the filling adds about 180 calories for a grand total of about 416 calories per White Fluff-Filled Donut.

What about those donuts filled with custard? Let's see:

Ingredients for Custard Filling in Donuts
1/2 cup of white sugar
1/2 cup of white flour
2 cups of hot milk
6 egg yolks
2 Tablespoons of butter or margarine
1 Tablespoon of vanilla - or favorite extract

The total calories for the tasty custard filling amounts to about half the calories of the white fluffy filling - 1,520. Yolks and sugar are beat together until thick, then flour is added. Hot milk gets added just a bit at a time so that the yolks don't scramble. The butter and extract goes in last.

Calories can be cut by using 1/2 sugar and 1/2 Splenda, skim milk and reduced calorie margarine without a drastic impact of taste.

In Summary

Opting for custard-filled donuts might trim calories, but reaching for a piece of fruit will definitely save calories. However, there are times when only a delectable donut will do - and when these times occur the best donut choice for the Calorie-Buck is the plain glazed donut generally weighing in between 180-220 calories.
