Devil's Food Pound Cake

Low fat recipe for devil's food pound cake for Diet Angels...

It's ultra easy to add flavor to traditional prepared cake mixes such as Duncan Hines and Betty Crocker without adding 'unhealthy' calories that thrive in fat found in most oils.

In the photo to the right, we substituted the recommended 3/4 cup of oil in the recipe for 1/2 cup of light sour cream - the 40 calorie per 2 Tablespoons 'Daisy' variety.

We also added a single serving container of prepared low fat chocolate pudding, three small eggs and about 3/4 cup of water.

Rather than containing 290 calories per serving (1/12th of cake) and 15 grams of fat, our low fat devil's food recipe contains 245 calories per serving and 10.5 grams of fat - almost 1/2 the fat content.

Rather than heap on calorie-loaded frosting, dust with a bit of powdered sugar or light whipped topping - the 15 calorie per serving variety.

If you "have been volunteered" to bring a dessert to a family or outside event, make everyone drop their mouths by making this cake into a creation. Simply top the entire cake with light whipped topping, then top that with fresh strawberries.

To further reduce the cake calories, use liquid egg substitute rather than whole eggs. As a note, eggs and oil give traditional pound cake rich condensed slices. Our recipe leans more toward a cake-texture than a pound-cake texture. To produce the pound-cake texture, use 4-5 extra large eggs, double the small eggs or use egg substitute.

Other methods that you can use in your recipes to produce low fat bakery goodies include:

- applesauce

- mashed banana or any fruit that can be mashed, from mangos to peaches

- dried fruits such as prunes; there is a trade-out when substituting dried fruit for oil as dried fruits are high in calories

- ground nuts which are naturally high in oils but these tend to be sources of healthy oils; again there is a trade-out of high calories in addition to the natural oils found in nuts

Diet Bites Official Low Fat Devil's Food Pound Cake Recipe

1 devil's food prepared cake mix (any variety - from original to pudding in the mix)

1/2 cup of light sour cream

3 eggs (small eggs work as well as extra large eggs in our recipe)

3/4 cup of water, room temperature

Simply mix by hand or with mixer and pour into a non-stick bundt pan which has been coated with no calorie cooking spray for extra 'no-sticking-to-pan' protection.

As a note, one Tablespoon of most all cooking oils contains 120 calories and 13.6 grams of fat.
