Meringue Cookie Recipe for Dieters

Snow Cookies (meringue cookies) Recipe

The following recipe makes several cookies for less than 75 calories.

That's pretty impressive seeing as how many cookies on the market these days contain more calories for just one! Some contain far more - particularly those that can be found at popular fast food restaurants.

And the bigger the item, the more energy values contained therein.

I remember a few years back when we stopped at a convenience store to purchase fuel. While my husband put the fuel into our old jalopy, I headed into the store in hopes of finding some fresh coffee.

There was a rack of sweet treats by the coffee bar and I saw a gigantic cookie, so I picked it up and looked at the nutritional label. Then I fainted. Well....almost.

That one big boy contained over 500 kcals. It was difficult to believe, but when I got to thinking about it, well - it was about two times larger than most fast food versions, and many of those hold around 200 kcals.

Ingredients for Diet Meringue Cookies

 

3 egg whites

1/4 teaspoon of cream of tartar

3/4 cup of sliced Splenda

Dash of favorite extract

How to Prepare Our Diet Meringue Cookies

Simply beat egg whites until foamy; add cream of tartar then beat until mixture forms stiff peaks. The cream of tartar will assist in making the egg whites peak faster.

Add Splenda a little bit at a time, adding extract last.

Of course, you can use white granulated sugar in the recipe but at the cost of more calories in the recipe.

A drop of food coloring can compliment the cookies.

For example, if peppermint extract is used, a bit of red or green food coloring will perfectly compliment the flavor.

Pipe or drop by the Tablespoon onto a cookie sheet that has been lined with parchment paper.

Bake in a preheated oven at 200 degrees for about 90 minutes - or until the cookies are crisp.

If you prefer to use sugar rather than Splenda, use 3/4 cup as they measure equally.
