Begin with boiled eggs - separating the white from the yolks. The dash of mustard adds taste and color to the egg salad. Pickle relish is optional. This egg salad can be taken up a notch by adding pimento, sliced green or black olives or finely chopped capers. Ingredients for this Low Calorie Recipe: 3 egg whites (removed from boiled eggs & chopped or mashed with a fork) 1 Tablespoon of Miracle Whip Light Salt & Pepper to suit personal taste 1 teaspoon of sweet pickle relish 1 teaspoon of yellow mustard 1/2 cup of finely chopped raw spinach (baby spinach)
As a note, for something different, try 'frying' a couple of egg white in a non-stick pan with butter flavored cooking spray, then place between two slices of fresh white bread that have been spread with a spoon of Miracle Whip LIGHT.
