Cheesy Quiche Recipe

The secrets in keeping our quiche low calorie lies within the crust and the use of egg whites.

Before beginning, allow the piecrust to completely come to room temperature, then roll it out so that it is as thin as possible. If it is too cool it will be more difficult to work with - and you want to work with it as minimal as possible.

Your challenge: making 2 thin crusts out of one regular piecrust.

We have added 3 yolks to the low calorie quiche because it needs a splash of yellow, and the yolks help bind the quiche together.

In addition, egg whites are basically tasteless and require a barrage of seasonings and spices in order to attain flavor. So the yolks make a nice, naturally flavored ingredient that is indeed the genuine flavor associated with traditional quiche recipes.

Simply whisk all the ingredients together adding cheese last, then fill pie crust.

Bake in a preheated 350º oven until quiche sets - about 20-30 minutes.

Ingredients for this Low Calorie Recipe:

3 egg whites + 3 whole eggs

1 cup of grated skim mozzarella cheese

1/4 cup of frozen spinach, thawed and dabbed as dry as possible (otherwise, quiche may get watery)

1 piecrust

1/2 cup of skim milk

salt & pepper to taste

 

The great thing about quiche is that it keeps really well. Be sure to refrigerate any leftovers and then warm up your serving in the toaster oven for your next meal.

 

If you are watching the amount of cholesterol in your daily diet, use the egg substitutes at the market in the place of hen eggs.
