Calories in Chicken Back

My mother came from a family of six kids, a mom and dad. She remembered amid her childhood those times when her own mother prepared a chicken.
There were two legs, two breasts, the pulley bone, two thighs, two wings and the back. That equaled nine servings, but my grandfather was a very hard working man as were my uncles and one piece of chicken wasn't quite enough, particularly the pieces with not much meat on the bone.
My grandmother always sacrificed for her family - and would always take the back of the chicken. It wasn't because she loved the flavor - because there just isn't much meat there. It was so the others could have more food.

And in living through the Great Depression (which they did), food was a very precious commodity.
