Celery is commonly used as a seasoning agent for soups, casseroles, stews and stir fry dishes along with onions, garlic and different varieties of bell peppers.

1. Enjoy at snack time in its plain state.

2. Fill the crevice with light pineapple cream cheese - or your favorite low calorie filler such as reduced fat pimento cheese.

Diet Recipe for Mexican Rice & Chicken

Saute with onion and bell pepper using a bit of extra virgin olive oil. When the mix starts to become translucent add 1 cup of cooked chicken and stir. Next, add a couple of teaspoons of ground chili powder and stir.

Add 2 cups of cooked rice (instant or long cook variety) and stir. Add one drained can of petite tomatoes. Pour into a casserole dish and top with grated Mexican cheese, the low fat variety.
