There are a plethora of beet species than can be planted in the humble home-gardener's planting space. We are particularly fond of red Detroit beets; they hold a bold, sweet flavor and are not overpowering to the palate.

One cup of raw beets contains 58 kcals.

When boiled in water and drained, one cup contains about 74 kcals. One cooked two inch specimen holds about 44 kcals when cooked and only 35 in its raw state.

Health & Nutrition Notes for Beets

Beets can be pickled using a mix of distilled white vinegar and sugar. Unless they are commercially processed, the shelf life in the refrigerator is very short, much like pickled boiled eggs.

This super food veggie is an excellent source for iron and potassium. It can be sliced after it goes through the cooking process and added to salads. It should be patted well before adding to the salad greens because of the potent natural dyes in the beet.
