Basic Muffin Recipe

You can add all sorts of tasty ingredients to the following basic muffin recipe to create exotic muffins - from raw oats to dried fruits to nuts to ground spices!

A great topping combo is a mix of dried oats, brown sugar and butter. Simply sprinkle on top of the muffins before popping them into the oven.

Bake in a preheated 425 degree oven for about 20 minutes after filling muffin cups with batter.

Mix the following ingredients:

1 egg, slightly beaten
1 1/4 cups of milk
1/4 cup of vegetable oil
1/4 cup of granulated sugar

Add the following:

1 Tablespoon of baking powder
dash salt
2 cups of all-purpose flour

Stuffin' Muffins Recipe

Our low calorie muffin recipe can be prepared in minutes and adjusted to suit anyone's taste. Only 125 calories per generous muffin!

Use the following ingredients to create a basic vanilla muffin, then add your favorite ingredients to take your muffin to another level. Dried fruits and nuts work wonderfully well.

You can also save calories by substituting the oil for the following:

Rather than 3 Teaspoons of vegetable oil, substitute any of the following:

- 1 banana

- 1/3 cup of apple butter or apple sauce

- 1/3 cup of regular sour cream

- 3 Teaspoons of cream cheese, regular

Adding grated fruit peeling to the muffin batter also adds flavor without adding fat or calories. Some of our favorite combinations include:

- dried cranberries, grated orange rind

- rum extract

- ground cinnamon, golden raisins, chopped pecans

Simple Simon Muffin Recipe

Ingredients

1 egg (70 calories)

1/2 cup of whole milk (80 calories)

3 Teaspoons of Vegetable Oil (180 calories)

1 cup of all-purpose Flour (400 calories)

1/4 cup of Splenda (0 calories + if you desire a sweeter muffin, add more Splenda. If you don't like sugar substitute, use sugar instead for an additional 200 calories.)
2 Teaspoons of Baking Powder
1/2 Teaspoon of Salt
1 Teaspoon of Vanilla Extract

Simply mix the above ingredients and pour batter into muffin cups which have been sprayed with cooking spray to prevent sticking.

Bake in a preheated 425 degree oven for about 12-15 minutes (until muffins are done).

Serve with a bit of low calorie margarine, or plain. Each plan muffin contains about 125 calories.

 

Ex Caliber Muffins, Low Fat

Serves 12 generously for about 110 calories each

Low Fat Recipe Ingredients for Low Fat, Low Calorie Recipe

2 Fresh Hen Eggs
½ Cup of skim Milk
1 Teaspoon of REAL Vanilla Extract
12 Packets of No Calorie Sweetener
1 ½ Cups of White Flour
1 ½ Teaspoons of Baking Soda
½ Teaspoon of Crème of Tartar
1 Ripened Banana – Fully Mashed by the Tot’s Tootsie
1 Teaspoon of Ground Cinnamon
½ Cup of Light Brown Sugar

Preheat the oven to 350 degrees. Next, in the mixing bowl combine milk, eggs, vanilla, sweetener, crème of tartar, baking soda &mashed banana. Slowly incorporate the white flour – stirring the bowl of goodies with a gentle hand, not a barbaric hand or the might produce 12 tough muffins.

Next, pour into muffin cups or a muffin pan. Fill about ½ full. Be certain to dust the pans or cups with non stick cooking spray. In a separate teensy bowl combine cinnamon & brown sugar. Sprinkle mixture on top of muffin cups. Transfer to muffin pan or cups &bake until golden – about 15 minutes.

Cherry Nut Muffins – Substitute ½ can of drained unsweetened cherries for the cinnamon & the banana.  Add ¼ cup of crushed pecans.

Chocolate Chip Muffins – Substitute ½ cup of powdered cocoa for the cinnamon &banana. Add ½ cup of mini chips.

Pumpkin Pie Muffins – Substitute banana for ½ can of packed pumpkin. Add ¼ teaspoon of ground ginger, ½ teaspoon of ground cloves & ¼ teaspoon of ground nutmeg.

Low Fat Raisin Bran Muffin Recipe

A reduced calorie, reduced fat recipe.

The Recipe Ingredients

Combine the following ingredients:

1 1/2 cups of all purpose flour
1 Tablespoon of baking powder
1/2 teaspoon of salt
1/3 - 1/2 cup of Splenda (you adjust the level of sweetness)
1 1/2 cups of raisin bran cereal
1 cup of skim milk
1 egg
1/4 cup of canola oil

Spoon into cupcake liners. Bake in a 400° preheated oven for about 25 minutes or until done.
