Nutcracker Eggnog Bread, a Lower Calorie Recipe

This holiday bread is a quick bread rather than a yeast-type bread. Be sure to use only light or low fat eggnog or calories and fat will shoot straight out of Santa's chimney.

Ingredients for this Low Fat Recipe

2 1/4 Cups of All-Purpose Flour, or Bread Flour
1 Cup of Light or Reduced Fat Eggnog
1 Cup of Splenda, measures like sugar
2 Egg's Worth of Egg Substitute
1 Tablespoon of Rum Extract
1 Tablespoon of Vanilla Extract
1/8 Teaspoon of Ground Nutmeg
1/2 Teaspoon of Salt
1 1/2 Teaspoons of Baking Powder
1/2 Cup of Naturally Sweetened Applesauce

How to Prepare Eggnog Bread Recipe

Combine all of the dry ingredients and wet ingredients separately, then add together.

Next, pour the batter into a baking dish sprayed with cooking spray to prevent sticking. Bake in a preheated 350° oven for about 45 minutes - or until toothpick inserted into center removes clean.

Store the bread in the refrigerator but do allow it to cool completely before wrapping for storage or you'll end up with a soggy texture.

Recipe Ingredients

1/2 cup of sifted powdered sugar
1 teaspoon (or two) of reduced fat milk or water
1/2 teaspoon of imitation rum extract
dash of ground nutmeg

When the bread is done, use the above glaze that is stirred together in a small bowl until dissolved; double the recipe if necessary.
