- Grind the Following Dried Ingredients in a Food Processor Until a Flour-Like Consistency is Reached:
- 1/4 Cup of Millet
- 1/4 Cup of Lentils
- 1/4 Cup of Great Northern Beans
- 1/4 Cup of Red Kidney Beans
- 1/4 Cup of Pinto Beans
- 2-1/2 Cups of Wheat
- 1-1/2 Cups of Rye
- 1/2 Cup of Hulled Barley
-
- Measure out 3 cups of the above flour mixture and to it, add 3 cups of all-purpose flour or bread flour. Combine and set aside, creating a well in the middle of the flours before doing such. Next, pull together the following, allowing mixture to 'grow' for about five minutes after combining:
-
- 2 1/2 Cups of Warm Water
- 1 1/2 Cups of Honey
- 1/2 Cup of Extra Virgin Olive Oil
- 1 Package of Active Dry Yeast
-
- Add the following to the above yeast mixture:
- 1 Teaspoon of Table Salt
-
- Next, pour mixture into well of flours. Knead until elastic-like, about 5-10 minutes depending upon climate conditions - as well as the condition of the kneader. Allow to ferment for 1 1/2 hours in a non-drafty area of your home. Next, shape dough and place into pans that have been sprayed with cooking spray to prevent sticking. Be sure to use a large baking pan that gives rising dough ample room. Bake in a preheated 350° oven until done - about 45 minutes.
- Health Note: Local honey has been found useful in combating allergies, so if you have allergies, try using honey produced locally.
