Free Diet Menus, Low Calorie Recipes  for Weight Loss

The Ricky - a Low Calorie Recipe

Eggplant is a savvy trickster to the old taste buds, making the dieter feel like they are enjoying a meaty feast rather than a healthy vegetable feast.

The key to this low calorie recipe is choosing a good eggplant specimen from your local market. It is almost impossible to rescue an eggplant that is filled with a bitter taste. To avoid the bitter 'apples' look for eggplant that is firm to the touch - and without blemish.

The Low Calorie Recipe: Cut two, one-half inch slices from eggplant, then dip the eggplant into a slightly beaten egg white OR egg substitute that contains both yolk and white. Dredge in flour, then 'fry' in a pan that has been sprayed generously with non stick cooking spray. Salt & pepper the flour before dredging to suit your personal taste.

Be sure to cook on low heat to avoid scorching the flour.

Next, spray two slices of bread with either buttery non stick cooking spray OR no calorie refrigerated butter spray. Pop into toaster OR 'slow cook' in a non stick pan until golden brown.

Spread  the golden brown toast with a teaspoon of light ranch dressing - or your favorite dressing. Next, add 1 lettuce leaf (or you may opt for raw baby spinach), 1 thin slice of tomato and some sprouts if desired.

Add 1-2 slices of eggplant.

You can save additional calories by using diet bread.  Calorie Content: About 200 calories if using 60 calorie per slice bread.
