- Open chickpeas and drain thoroughly. Rinse if desired and drain again.

- Pour into a non-stick pan sprayed with cooking spray.

- Cook on LOW heat until chickpeas appear very dry (about 5 minutes or so on the fire).

- Remove and serve with a pat of butter, margarine OR zero/light butter substitutes.

- Open canned beets and carefully drain juice into a deep bowl.

- Add 1/2 cup of Splenda to beet juice (may be adjusted to suit personal level of sweetness.

- Add 1/4 cup of white vinegar (this can also be adjusted).

- Stir liquid, then add beets.

- Transfer into a pretty sealed jar and place into the fridge. Do not enjoy until cold. Be sure to use within a couple of days.
