- Open chickpeas and drain thoroughly. Rinse if desired and drain again.
- Pour into a non-stick pan sprayed with cooking spray.
- Cook on LOW heat until chickpeas appear very dry (about 5 minutes or so on the fire).
- Remove and serve with a pat of butter, margarine OR zero/light butter substitutes.

14 Diet Carrots - This low calorie recipe is so good that you won't want to share it with your mean old mother in law. Keep her (or 'it') guessing while the pounds melt off of 'moi'.

- Clean 14 fresh, whole carrots taking care to remove tops and bottoms (no peeking).
- Slice into thin circles.
- Use a tab of olive oil and cook on the stove top in a non-stick pan until golden brown (about 7 minutes).

- Open canned beets and carefully drain juice into a deep bowl.
- Add 1/2 cup of Splenda to beet juice (may be adjusted to suit personal level of sweetness.
- Add 1/4 cup of white vinegar (this can also be adjusted).
- Stir liquid, then add beets.
- Transfer into a pretty sealed jar and place into the fridge.
 
Do not enjoy until cold. Be sure to use within a couple of days.
