Low Calorie Recipe for Papa Joe's Magic Mushrooms for Dieters
One
of my favorite things in the universe is mushrooms.
Last week as Tom and I were driving home, I spied
the largest mushroom that I have ever seen.
At
first, Tom laughed - telling me that he thought it was
a stray soccer ball, but soon we were out of the car
and nearing the giant puff-ball mushroom. A picture
was in order, but one of us (I'm not saying who...)
could not resist touching the mushroom and immediately,
it made a crunch and was no longer photogenic. And
the pile of ants that were burrowed beneath the tall
puff confirmed that it was fading into the distance
fast - with or without that magic touch.
Mushrooms
are ultra low in calories - about 20 calories per half
cup. Another great plus about mushrooms is that
they hold a mysterious, earthy taste and substitute
nicely for a meat dish.
Next
time you enjoy a burger, try using a couple of giant
portabella mushrooms instead of buns. Pretty,
too.
The
following recipe is ultra easy and takes about five
minutes to prepare. It also makes a very colorful,
beautiful dish. Best of all - it's tasty! Very
tasty!

Calorie Recipe for Papa Joe's Magic Mushrooms
Ingredients:
- Small
package of whole button mushrooms
- 1
small bell pepper, diced (red will really
make the dish pop with colors)
- 1
small white, yellow or purple onion, diced
- 1/2
cup of frozen or fresh spinach
- Non-stick
cooking spray
- Small
bright red cherry tomatoes (optional)
- Sweet
dried basil
Spray
a non-stick skillet with cooking spray and add all the
ingredients except the tomatoes and basil. Just before
the mushrooms reach desired tenderness, add the tomatoes
and the dried basil and cook for about one more minute
- just long enough to coat and warm the tomatoes.
