Simple Recipes for Nectarines

Nectarine Cobbler Recipe

Recipe Ingredients

1 all-purpose pie crust, unbaked
6 cups of sliced nectarines, peeling and seeds removed
1/2 cup of dark or light brown sugar
2 teaspoons of ground cinnamon
1 Tablespoon of margarine
1 Tablespoon of Cornstarch + water for thickening purposes

How to Prepare This Recipe

Slice the dough into long one-inch strips and line the bottom of your cobbler dish.

You'll need to cook the fruit and thicken it before adding to the dish. Place the nectarines in a bit of water and cook for about 5 minutes after the boiling point - or until fork-tender.

Remove the nectarines and thicken the fruit juice with the cornstarch and water. Put the fruit back into the pot, add the margarine, the brown sugar and the ground cinnamon and stir to incorporate. If the mixture is too thick, add a bit of milk to thin it out.

Transfer the filling to the cobbler dish, alternating it with more strips of dough.

Bake in a preheated 350 degree oven until the crust is golden. Sprinkle the top with a bit of white granulated sugar if you wish after it comes out of the oven. This will add a crispness to the cobbler.

1 large box of Reduced Fat Vanilla Pudding, prepared with low fat milk as directed on the box directions*
Fresh slices of nectarine
1 Graham Cracker Crust

How to Prepare This Recipe

*You can use instant pudding or the kind that requires cooking - or you can even prepare it from scratch.

This recipe is low in fat content.

Prepare the pudding as directed on the box and pour it into the graham cracker crust.

Top with fresh slices of nectarines, arranging them in spiral-fashion on top of the pie.

This is a wonderful treat for those warm months of the year, and because we're using reduced fat ingredients, this dessert can be a part of most healthy weight reduction plans.

How to Prepare This Easy Low Calorie Recipe

This takes only a couple of minutes to prepare. Simply take slices of fresh nectarine [or peaches, your favorite berry or bananas] and add a few splashes of coffee creamer.

If you use the reduced fat varieties, they only contain 25 calories per serving - and I like to use 2 servings over my fruit.

Dieting Tips for Nectarines

1. Add fresh slices to your next healthy vegetable salad mix. One of our favorite recipes is a bed of fresh spring greens, 1/8 cup of hulled sunflower seeds, 1/2 nectarine cut into slices, 2 slices of crumbled bacon that has been microwaved between two moistened paper towels [50 calories total] and a fruit based Walnut-Raspberry dressing.

2. Puree and substitute for oil and other recommended fats in your favorite recipes. They work exceptionally well in cake mixes and quick bread recipes.

3. Combine with other fruits to create a decadent salad. Add a few dashes of ground cinnamon and crumble brown sugar on top.
