Currant Muffin Recipe

The Recipe Ingredients, Makes 1 Dozen Muffins, 150 Calories Each

1 3/4 cups of all-purpose self-rising flour
1/3 cup of light brown sugar OR you can use white granulated sugar
1 slightly beaten egg
3/4 cup of reduced fat milk
dash of salt
1/4 cup of vegetable oil
1/3 cup of currants

Mix the dry and wet ingredients in two separate bowls before stirring together. The batter should be lumpy. Pour into muffin cups and bake at 400 degrees for about 15-20 minutes or until golden brown.

 

Currant Quick Bread Recipe

Purchase a vanilla-based quick bread mix at the market. Prepare as directed on the package, adding 1/2 cup of currants to the recipe. Bake as directed.
