Easy Blueberry Muffin Recipe

How long has it been since you prepared a loaf of bread at home? That long, eh?

The Recipe Ingredients, Makes 1 Dozen Muffins, 150 Calories Each

1 3/4 cup of all-purpose flour
1/3 cup of sugar
2 teaspoons of baking powder
1 slightly beaten large egg
3/4 cup of reduced fat milk
dash of salt
1/4 cup of mashed/pureed blueberries OR 1/4 cup of applesauce

Combine the dry ingredients in a mixing bowl and combine the wet in a separate bowl. Create a well in the middle of the dry ingredients and add the wet. Stir to incorporate but take care not to overwork the batter. It should still be lumpy.

Bake at 400 degrees for about 15-20 minutes or until golden brown.

3. Keep a bag of frozen blueberries on hand for snack attacks. They are naturally low in calories and contain scant amount of fatty acids.
