Lower Calorie Banana Pudding Recipe

You can prepare your pudding from scratch if you wish. For this recipe I opted to use regular vanilla instant pudding.

You can use the sugar free or reduced fat brands to save a few calories and fat grams, but I like the full-body flavor of the regular. The caloric differences aren't that vast when reduced fat milk is used in preparation.

You can also purchase the banana flavored pudding - or add a teaspoon of banana flavoring to the vanilla.

The Recipe Ingredients

1 large box of Instant Vanilla or Banana Pudding
3 cups of Reduced Fat Milk
1 Teaspoon of Imitation Vanilla OR Vanilla Extract, or you can use a vanilla bean
1 Pound Cake, or you can use Sponge Cake
Raspberry, Strawberry, Peach, Apricot or Blackberry Preserves OR Jam OR Jelly

How to Prepare This Recipe

The pudding requires only 10 minutes or so in order to set up, so we need to prepare our bowl so that we can add it as soon as it's made.

Cut the pound cake into long, thin logs. Spear them with the preserves you have chosen. The photo to the right shows how to place them. In-between, put rounds of banana.

Next, prepare the pudding with the milk and add the vanilla. Spoon into the bowl, add some of the cookies, then slices of banana and continue until you reach the top, ending with a layer of the pudding. Squirt the whipped cream around the bowl, or you can cover the entire top if you wish. This recipe makes a beautiful holiday or meal time display.

Recipe for Caramelized Bananas

You will only need 5 ingredients for this recipe. One large banana creates two generous servings and can be prepared in less than five minutes. Be sure to use a non-stick skillet or pan amid the cooking process.

The Recipe Ingredients

Ingredients: 1 large banana, 1 teaspoon of vanilla extract or imitation vanilla, 1/4 cup of light or dark brown sugar, 1 Tablespoon of margarine and 1 teaspoon of ground cinnamon.

How to Prepare This Recipe

As a preparation note, we recommend that you use the regular margarine that contains about 50 kcals per serving.

Start by melting the margarine in the pan. While it melts, slice the banana into thin strips, lengthwise. Add to the melted butter and cook until warm. Add the remaining ingredients. Delicious when served either hot or cold.

How much beta carotene in bananas?

You'll get a splash of health in every bite!

1 small banana contains about 26 g's of beta carotene; 1 large contains 31 g's. One medium contains 35 g's and one extra large holds 40 g's.

They are also a very rich food source for B-Vitamins and potassium, one of the three chief electrolytes in the human body in tandem with sodium and calcium. These 'big three' work together in keeping the fluids within the body in balance.
