Simple Recipes for Avocado

When I was a kid, this fruit rarely showed up in our kitchen. It was very expensive - even way back then.

My first experience with avocado was actually at a Mexican restaurant where it was the chief ingredient of guacamole.

As time marched forward, I came to create my own version of this wonderful and rich dish. We'll post that recipe below - but for now, let's look at our yummy salad recipe built upon this excellent food which is rich in fatty acid content - the good kind.

Lower Calorie Avocado Salad Recipe

You will need the following ingredients:
1 large avocado that is fully ripened, peeled and cut into bite-sized cubes
1/2 head of Iceberg lettuce, shredded
1 can of English peas, fully drained
1 cup [8 ounces] of reduced fat [skim variety] of finely shredded Mozzarella cheese*
1+ cups of Miracle Whip Light [reduced fat but not zero fat] Salad Dressing
3 large tomatoes, cut into tiny chunks
Optional: sliced black olives, jarred pimentos

*You can opt for the different seasoned cheeses if you wish - such as Mexican or Italian blends.

How to Prepare This Recipe

Start this salad with a bed of the lettuce and simply layer until you reach the top. It is beautiful when served in a round, clear bowl. When you reach the top, make sure the cheese OR the Mayo is added last. If the Mayo is last you can sprinkle it with ground paprika and it's quite elegant as a presentation at the family table - or amid celebrations.

Homemade Guacamole Recipe

You will need the following ingredients to prepare this Guacamole Recipe:

1 fully ripened but not over-ripened avocado of large size
1 Tablespoon of light Miracle Whip
1 teaspoon of fresh lemon juice
1/4 cup of salsa Verde
1 teaspoon of ground chili powder
1/2 teaspoon of ground paprika

How to Prepare This Recipe

Simply mash the fruit and incorporate the other ingredients.

While high in calories and fat, they stem from the healthier fatty acids. It only takes a small amount to produce a barrage of wonderful texture and flavors.

Diet Tips for Avocado

1. Health studies also indicate that it may impact the metabolism and assist in losing excess pounds.

2. Try adding a few thin slices to your next sandwich or lean burger.

How much beta carotene in avocado?

Avocados are a good but not a superior food for beta carotene benefits. One contains about 161 µg's of beta carotene.

Those foods holding the most benefits in this area include: carrots, sweet potatoes and pumpkin.
