Low Calorie Recipes for Beets & Greens

Pickled Beet Recipe

I make use of canned varieties because they are already cooked and sliced - or you can use the whole variety.

Begin by draining off the excess liquid of a medium size can. Add the liquid to a pot.

Add 1/4 cup of white distilled vinegar to the liquid along with 1/2 cup of sugar OR Splenda which measures like sugar, cup per cup.

Cook the liquid and allow it to cool. Place the beets into a clean clear jar and cover with the sweet and sour liquid. Store in your refrigerator and use as quickly as possible.

Marmalade Glazed Beet Recipe

Begin this recipe by draining off the juice of a can of sliced beets. Add one Tablespoon of margarine to a deep non-stick pot and melt. Add 1 Tablespoon of dark or light brown sugar and stir. Next add 2 Tablespoons of marmalade and 1/4 cup of orange juice. Add the beets and coat with the mixture. Cook until hot.

If you like, you can thicken the liquid with a cornstarch mixture. Just add 1 teaspoon to the orange juice before adding it to the pot.

Beat Excess Fat With Healthy Beets

Beets can be part of almost-all healthy weight loss plans. They are wealthy in several essential vitamins and minerals - and they are available is so many varieties.

They are also exceptionally easy to plant, grow and harvest. My father used to be a gardening monster and he grew the best beets.

He also produced bumper crops. My mom would boil and butter them and the rest, she would home-can using a pickling recipe. They enjoyed beets all through the year and would always bring out a Mason Jar of them on Thanksgiving and Christmas for the family gatherings. And they were always enjoyed.

How much beta carotene in beets & beet greens?

Beets are a good source for beta carotene, but not an impressive one. Look to carrots, pumpkin and other orange and yellow foods - red ones too in their natural state for the most benefits.

One cup of beets contains about 27 µg of beta carotene. 1 cup of cooked beet greens contains about 6,610 µg's.

If you're seeking to add more of this nutritional element to your weight loss plan - reach for the greens. As a note, all leafy greens are very rich sources for beta carotene.

Natural, Refined Foods & Beta Carotene Content

Even commercially processed foods contain hints - but nowhere near the amounts of the beet greens.

In looking at the data chart below, do you see foods which can be a part of your healthy fat reduction plan? Actually, all excepting the pecan pie can be modified to a reduced fat state to become healthier items.

The fast food taco contains about 170 calories while the small cheeseburger holds about 310.

As to the pecan pie, because it is mined with syrup and nut meats along with a crust, the caloric values can exceed 500 kcals per slice. You'll be wiser in choosing a slice of healthy banana bread for about 100 kcals per slice.
