Alaska Diet

Alaska - The Great Land State, The Land of the Midnight Sun State, The Mainland State, The Last Frontier State.  A arctic state of Diet Affairs filled with flavors of the old world combined with the new....

Many, many moons ago when I was but a little girl, one of my teachers told me that the children of Alaska enjoyed but one snack which was whale's blubber. It was enjoyed a bit like chewing gum is today.

Translated, Alaska means 'Great Land' and is more than two times bigger than Texas.  The Great Land is also harbor to some of the tastiest cuisine in the world, a place where one would not think that anything could grow.

Although much of the food staples are imported, some crops are produced including: potatoes, carrots, berries, cabbages, milk and eggs - which we will base our Alaskan Diet Menu upon below.

Free Alaska Diet Menu - Total Calories 360

Alaska Potluck Supper - Start with our recipe for Sockeye Salmon.  Spray one fillet of salmon with no calorie cooking spray, butter flavor, then salt and pepper to your preference.  Bake until tender at 350 degrees in a preheated oven.  Remove and drain juice from salmon.  Stir in 1 teaspoon of capers.  

Transfer about 3 ounces of the cooked salmon to your plate.  Top with caper sauce.  About 200 calories.

'Fried' Tundra Tators - Coat skillet thoroughly with cooking spray.  Carefully slice potato into thin slices, then cook in skillet until they reach preferred doneness.  Salt, pepper. Makes 2 servings for about bout 60 calories each.

Big Ice Slaw - Shred wedge of cabbage and 1 carrot.  Add dash of celery seed, salt and pepper.  Add 1 Tablespoon of milk and 1 Teaspoon of golden raisins (optional).  Add Splenda to meet personal preference. Makes 2 servings for about 50 calories each.

Dessert - Frozen Tundra Berries - Enjoy 1 cup of frozen berries sprinkled with Splenda. About 50 calories.  Add a couple Tablespoons of light whipped topping if desired but be sure to add on calories to meal.

Arizona Diet

Arizona - The Grand Canyon State, The Apache State.   Our free diet menu for Arizona salutes the marriage of south meets west.   The southwestern food far  unites with a climate that is ripe for dude ranches and nature explores.

To reflect the diverse culture and food fair of Arizona we have taken to the outdoors - by a 'ready' campfire. Grab that hat, nestle those  alligator feet in some lizard-skinned boots and don't forget your spatula.   We're about to ride hard and live long with this tasty Southwestern menu that is low in calories and low in fat.   Yee-ha!

Free Arizona Diet Menu - Total Calories 345

Arizona Gaucho Nachos - Mission tortilla chips - the round variety - about 20 chips (280 calories).   Smear each chip with a mix of the following: 1/4 cup of refried beans, 1 small sauteed chopped onion, 1 Tablespoon of chili powder, one-half teaspoon of cumin (optional) and a bit of fresh chopped cilantro (optional).   Warm chips by the campfire by placing foil in an iron skillet and laying chips on top.   Be careful not to burn the chips and yourself.  

Heat the following over the campfire OR in your microwave: 3 ounces of Velveta cheese (240 calories), 2 Tablespoons of your favorite salsa and one-half cup of skim milk (40 calories).   Heat until melted.   Pour over chips.   Add chopped jalapeno peppers if desired.

Serves 2 for about 300 calories each.   Top with light sour cream if desired, but be certain to count extra calories.

Arizona Tortilla Soup - Mix together the following ingredients in a thick soup pot and heat until hot: 1 can of clear chicken broth, 2 Tablespoons of fresh cilantro, 1 small diced onion, juice of one small lime, cracked pepper. Cook until onions are tender add 3 ounces of diced boned breast of chicken (about 140 calories)  and 1 small can of  Mexican style variety diced tomatoes.  

Serves 2 for about 100 calories each.   Add a bit of mozzarella cheese and crumbled tortilla chips for additional calories if desired.

Dessert - Enjoy 1 cup of fresh strawberries sprinkled with Splenda. About 45 calories.   Add a couple Tablespoons of light whipped topping if desired but be sure to add on calories to meal.
