Getting More Healthy Vegetables Into Your Diet

Over the years, one of the chief complaints that I have heard among dieters is the utter dislike for vegetables. A common question is, 'Do you have a recipe for people who don't like vegetables?" You bet!

Recipe Ingredients for Diet Vegetables Cakes

2 cups of shredded vegetables*
1/2 cup of finely crushed bread crumbs, commercially prepared or homemade

1 egg OR 1/4 carton of egg substitute

salt and cracked black pepper to suit personal preference

no calorie, non-stick cooking spray - butter flavored

*Carrots, mushrooms, summer squash such as yellow straight necked and zucchini, whole corn, chopped broccoli and potatoes make a great mix of vegetables for this recipe. Be sure to add at least one pungent vegetable traditionally used for seasoning purposes such as chopped onion, bell pepper, leeks, chives, celery or garlic.

Eggs, Cholesterol Concerns

As to the recommended egg, the substitute will work best for those who are working to keep cholesterol out of their food and eggs are very high in such - so much so that the official recommendation for such is one per day, and that includes the amount consumed in recipes.

The use of the egg is for binding the ingredients together.

Sodium Concerns in Recipes

Where the salt is concerned, we'd like to suggest that you work on trimming the amount that you use in your daily diet to a minimum.

Science and health studies have shown that individuals who do such tend to live healthier and longer lives.

If you are one of the ones who is impacted by salt, you may experience the following negative health issues: bloating, swelling - particularly in the feet, face and hands, in addition to a spike in blood pressure readings.

Eliminating Fats to Save Calories

As to the cooking spray, any variety can be used other than the suggested butter flavored.

Using the spray is a great way to keep caloric and fat grams in check, particularly when compared to the traditional trying method for vegetable cakes.

Seasonings & Spices Add Flavor Without Adding Calorie & Harmful Lipids

You can also add your favorite spices to the recipe - or make use of seasoned bread crumbs.

Parsley, paprika, dill weed, ground chili powder, cilantro, ground cumin, onion flakes - all make excellent additions to this recipe. The flavor combinations are almost endless so allow your taste buds to lead the way.

How to Prepare Our Vegetable Cake Recipe

Mix all the above ingredients except the cooking spray. Coat a non-stick pan very well with the cooking spray, then form vegetable mix into small cakes or patties and carefully place into pan.

Allow vegetable cakes to turn golden brown on one side, then carefully turn and cook until golden brown on the opposite side.

Remove and enjoy with a light reduced fat  ranch dressing OR a light jam for dipping.

Vegetables are ultra low in calories and are necessary in providing a nutritious diet. They also help fight against cancer, heart disease as well as a myriad of other diseases.
